While this may seem pretty obvious, it makes such a difference in my ability to make something healthy and satisfying, quickly, that I had to share...
When you are not filling up on bread, it can be important to 'bulk up' your meals with veggies. For me, this usually means making most food into a salad. While I sometimes buy bags of lettuce, I generally find that they do not have a very long shelf life, so I like to buy full heads of lettuce. However, the prep for a salad when you start with a dirty head of lettuce, is sometimes more than I have in me when I am hungry!
So, here is how I make sure I have fresh, clean lettuce all the time...
1. Buy this salad spinner. Totally #dbsobsessed. It works well, is durable, and most importantly it locks to you can store it in the fridge, using less space, and keeping out air.
2. Chop, wash, spin your lettuce in said spinner. I find that 3 heads of romaine are snug, but they fit.
3. Dump all excess water from the bottom.
4. Lock and store in your fridge, taking out handfuls as you need them. The lettuce should keep for a week, no problem.
