Ok, I admit, this is not in fact a post about the first tomato I have ever had. It is however a post about that exciting first ripe tomato of the season that I so look forward to enjoying! After suffering through a long winter of sub-par tomatoes which were flown in from God-knows-where, the wait is over! This past weekend my stepmother and I headed over to the Templeton Farmer's Market, and while I was there I bought the necessary ingredients to make that first Early Girl of the season shine! Early Girl Spring Salad:
serves 4 Ingredients: 4 early girl tomatoes, halved then thinly sliced 1 bunch fresh spinach, washed and roughly chopped 1/2 english cucumber, peeled intro strips, then dried with a paper towel 3/4 C Happy Acres Goat Cheese (this cheese is INCREDIBLE) 3 T we olive olio nuovo salt pepper Directions: Simply toss all ingredients in a large bowl with salt and pepper to taste, and enjoy! The fresh, bright flavors of the produce and goat cheese will shine on their own, with just the small amount of help brought to the table by the oil, salt and pepper. On a warm day, sitting out in the sun, there really is no better lunch than this salad!
